Hot Chocolate Never Felt So Good!!

It's one of those perfect days for hot cocoa- snow, crisp air, and winter sun.  Craving something warm, soothing and delicious (and craving some sugar too) meant that making hot chocolate was a fabulous choice.  However, we don't like to eat sugar and have been obsessed with using dates to sweeten our baking lately.  They are naturally sweet and yet packed with minerals and fiber, so they don't spike blood sugar while supplying us with important nutrients at the same time. This recipe is SO simple and SO tasty, you'll never want to go back to those instant packs of hot cocoa again.

Hott Hot Chocolate

Ingredients: 1 cup almond milk or rice milk 3 tsp creamed dates (recipe below) 1 tsp unsweetened cocoa powder or cacao powder 1/4 tsp coconut oil

Directions: 1. Gently heat the milk in a saucepan. 2. Add the creamed dates, cocoa powder, and coconut oil. 3. Drink up!

Creamed Dates: This creamy mixture is simply made with dates and warm water in a blender or food processor. You can make a large batch to store in the refrigerator. Use for baking or even to spread on top of toast as a replacement for jam.
