You DO Win Friends with Salad!

Salad is the classic option for a healthy lunch.  But those salads can get pretty boring after a while.  Here is a recipe for a salad that is jam-packed with yummy flavours and full of protein to make it a substantial meal. Tip for Sundays: Make a large batch of roasted red peppers, roasted zucchini and prepare any other veggies that you normally put into salads.  You will have plenty of veggies to grab for lunch during the week and quickly add into salads and meals.

Ingredients: 3 cups mixed salad greens and/or baby spinach 1/4 cup roasted red peppers 1/3 cup roasted zucchini 1/2 cup black beans 1/4 cup sliced almonds

Dressing: 2 Tbsp olive oil 1 Tbsp white wine vinegar 1/2 tsp mustard 1/2 tsp maple syrup 1/4 tsp sea salt

Making Roasted Red Peppers:

Ingredients: 2 or 3 red peppers

Directions:

  1. Set oven to broiler.
  2. Slice 2 or 3 red peppers into large pieces.
  3. Spread peppers out  on a baking sheet.  Lightly toss with a high heat cooking oil, such as grapeseed oil or ghee.
  4. Broil for 10 minutes or until roasted.

Making Roasted Zucchini:

Ingredients: 2 or 3 zucchinis 1 clove of garlic, minced sea salt

Directions:

  1. Set oven to broiler.
  2. Chop zucchini into small pieces.
  3. Lightly toss the zucchini, garlic, sea salt and a high heat cooking oil together.  Spread out on a baking sheet.
  4. Broil for 5 minutes or until roasted.
