Strawberry Coconut Birthday Cupcakes (gluten free & sugar free)

We all want something yummy, sweet and special on that day that we turn one year older.  But no one wants to feel the crash in energy after having a sugar high.  We love sweets and desserts.  What we love even more- is making desserts that are actually good for the body too.  So go ahead, you can have your cake and eat it too!!

Ingredients: ⅓ cup coconut flour 3 Tbs coconut oil 3 Tbsp maple syrup ¼ tsp baking soda pinch sea salt 2 eggs 1/3 cup almond milk or rice milk

Icing: 2 Tbsp butter and/or coconut oil ½ cup dates ⅓ cup water (add gradually to thin out)

Directions: 1. Preheat oven to 350. 2. Beat together the eggs, maple syrup, milk and coconut oil until fluffy. 3. Add the coconut flour, baking soda and sea salt. 4. Fill mini muffin tins with the cupcake batter. 5. Bake for about 20 minutes.  Prepare icing while they are baking. 6. Allow cupcakes to cool, spread icing over and add some fresh strawberries!
