This last week has been full of cooking and sharing lush, divine food. Lots of magic happened in the kitchen, resulting in some exciting recipes bursting with flavour and interesting combinations of spices that will make your taste-buds dance!
This vibrant marinade is fabulous on any protein- whether you are vegetarian and want to spruce up your tofu and tempeh OR are an omnivore wanting to make some interesting chicken or seafood- this could be your new favorite sauce.
Ginger Lime Marinade
4 Tbsp fresh lime juice 3 Tbsp coconut oil (melted) 2 tsp grated/minced ginger root 2 Tbsp maple syrup handful green onions large handful fresh mint leaves ⅛ tsp sea salt ____________________________________________________________
1. Blend all ingredients in a food processor until creamy. 2. Marinate your choice of protein for 30 minutes or longer, if you have the time. 3. Grill lightly or roast in the oven at 375. 4. We love to serve this on skewers, complete with some fresh mango and cucumbers. Mango is a wonderful fruit for digestion- it is full of enzymes that get your digestive juices going! ____________________________________________________________
