1/2 tsp fresh ginger, grated 5 Tbsp vegetable broth 3/4 tsp mirin 3/4 tsp umeboshi plum vinegar 2 tsp honey sea salt
1 serving of rice noodles 1/3 cup grated carrot 1/2 cup grated cucumber 1/3 cup mango, cubed large handful mint, chopped handful green onions, chopped 1/4 cup roasted organic peanuts (or other nut/seed)
1. Mix all of the sauce ingredients together, set aside. 2. Toss together the salad ingredients in a large bowl. Mix together with the sauce. 3. Top with chopped organic peanuts (or other nut/seed).
