Brunch is the best meal, because we get to eat a whole spread of lots of different dishes! If you are a brunch person, or are just looking for new inspiration for breakfast or lunch, keep reading!

The Menu:

Quinoa Herbed Salad Healthy Egg Salad Almond Biscuits Fresh Fruit Salad Steamed Kale Roasted Squash

Quinoa Herbed Salad:

Ingredients:

2 cups quinoa, cooked 1/3 cup basil, chopped 1/3 cup mint, chopped 1/3 cup parsley, chopped 1/4 tsp sea salt or herbamare black pepper 1 Tbsp olive oil 1/2 lemon, squeezed

Directions:

  1. Chop the herbs.
  2. Mix together the quinoa, herbs, sea salt, black pepper, olive oil, and lemon juice.

 

Healthy Egg Salad

Ingredients:

3 hard boiled eggs 1/3 cup sundried tomatoes, chopped 1/3 cup sprouts, chopped 1/8 tsp sea salt 1 tsp whole grain mustard 1 tsp Spectrum Organic Canola Mayonnaise (made with whole ingredients) OR 1 Tbsp plain yogurt

Directions:

  1. Prepare the eggs- Boil water with eggs in a small pot.  Cook for 13 minutes.  Remove from heat and place eggs in cold water to cool.
  2. Peel the eggs and chop up into pieces.  Mix together with the sundried tomatoes, sprouts, sea salt, mustard, and Spectrum mayonnaise OR yogurt.
