Dreamy Date Cardamom Granola

Last weekend we bought the most fantastic local, Ontario-grown peaches.  Yum, so good and juicy!  We were brainstorming all sorts of ideas for what to do with so many peaches- crumble, sorbet, salads...and then we thought how perfectly peaches go with some fresh granola.


But, not just any old average granola. We wanted something with excitement!


Cardamom is such a unique spice, full of complex flavour- sweetness with exotic, complex depth!  Like most Ayurvedic spices, cardamom also supports digestion and is known to reduce gas and bloating.  Cardamom is great for increasing overall circulation in the body, which can help in cleansing and removing toxins, especially from the respiratory system.


This granola is sweetened with dates, which are one of our favorite sweeteners because they are full of nutrients and fiber.  This means they stabilize blood sugar and give us energy, as opposed to contributing to energy crashes as a result of eating processed sugar and foods.

So, we have:

Dreamy Date Cardamom Granola


4 cups oats 1/2 cup almonds, chopped 1/2 cup walnuts, chopped 1/3 cup sunflower seeds 1/2 cup shredded unsweetened coconut 1/2 cup dates 1/2 cup water 2 Tbsp maple syrup (or omit, if you want to reduce sugar content) 1/4 cup coconut oil or ghee 1/2 cup raisins and/or dried cranberries 1/4 tsp cardamom (a little goes a long way, you can add more if you prefer) 1/2 tsp cinnamon


1. Preheat oven to 350. 2. Toss together the oats, nuts, seeds, coconut, and spices. 3. In a food processor, cream the dates with water.  Add in the coconut oil and maple syrup. 4. Mix everything together.  Spread out on a baking sheet. 5. Bake for 10 minutes.  Stir around and place back in oven for another 15 minutes, or until lightly golden. 6. Serve with organic whole milk yogurt or some almond or rice milk.   And of course, along with some fresh peaches!!!
