Black Bean Yum Tum Stew

I have been craving black beans all day.  It's been a rainy, dreary, overcast day...even though it is June 3rd, and I wanted something warm and comforting, oh so much!!

 

So, I decided to whip up an easy peasy batch of black bean soup...sumer style (a little bit lighter and less heavy than the standard black bean soup).

 

 

Ingredients: 2 tsp grapeseed oil, ghee or coconut oil 1 can of black beans (Eden is the best brand- they make BPA free lining) 1 onion, chopped 2 stalks of celery, chopped 1 carrot, chopped 1 sweet potato, chopped in cubes 3 cloves garlic, chopped 1/2 cup organic corn kernels 4 cups kale, chopped large handful cilantro, chopped 1 vegetable bouillon cube 3 Tbsp tomato paste 1/2 tsp coriander 1 tsp cumin 1 tsp chilli powder 4 cups water

 

Directions: 1. Chop the vegetables. 2. Heat a large pot with the oil.  Saute the onions and garlic for a few minutes, until they begin to turn translucent. 3. Add the celery, carrots, sweet potato and spices.  Saute for another few minutes, until you smell the aroma of the spices. 4. Add the tomato paste, bouillon cube, water, black beans and corn kernels. 5. Simmer, covered, for 15-20 minutes. 6. Add the kale and turn off the heat. 7. Sprinkle fresh cilantro on top before serving.
