2 cups chickpeas, cooked (hummus) 2 cups butternut squash, chopped in cubes (d'lat) 1 onion, chopped 3 cloves garlic, chopped thinly 1 Tbsp high heat cooking oil (such as ghee or grapeseed oil) 1/8 tsp sea salt 2 tsp sumac pinch cayenne pepper (to taste preference)
3 Tbsp olive oil 1/2 lemon, juiced 2 Tbsp honey sea salt to taste
1/2 cup cilantro, chopped 1/2 cup parsley, chopped 1/2 cup mint, chopped 1/3 cup green onions, chopped
1. In a large pan saute the onions and garlic with high heat cooking oil for a few minutes, until the onions start to turn translucent. 2. Add the squash, chickpeas, sumac, sea salt, and cayenne pepper. Cook for 15-20 minutes, until the squash is soft and the spices are fully cooked into the chickpeas. 3. While the chickpeas and squash are cooking, mix together the sauce ingredients- lemon, honey, and olive oil. 4. Toss all of the ingredients together in a bowl. 5. This is delicious served with a fresh green salad, quinoa, and/or polenta.

After a meal like this...dessert is perfect (isn't dessert always perfect?). When we eat dessert, we like to choose sweets that are also nourishing and support the body (instead of depleting it).
