Sumac Spiced Hummus D'Lat (Chickpea & Squash Salad)

2 cups chickpeas, cooked (hummus) 2 cups butternut squash, chopped in cubes (d'lat) 1 onion, chopped 3 cloves garlic, chopped thinly 1 Tbsp high heat cooking oil (such as ghee or grapeseed oil) 1/8 tsp sea salt 2 tsp sumac pinch cayenne pepper (to taste preference)

3 Tbsp olive oil 1/2 lemon, juiced 2 Tbsp honey sea salt to taste

1/2 cup cilantro, chopped 1/2 cup parsley, chopped 1/2 cup mint, chopped 1/3 cup green onions, chopped

1. In a large pan saute the onions and garlic with high heat cooking oil for a few minutes, until the onions start to turn translucent. 2. Add the squash, chickpeas, sumac, sea salt, and cayenne pepper.   Cook for 15-20 minutes, until the squash is soft and the spices are fully cooked into the chickpeas. 3. While the chickpeas and squash are cooking, mix together the sauce ingredients- lemon, honey, and olive oil. 4. Toss all of the ingredients together in a bowl. 5. This is delicious served with a fresh green salad, quinoa, and/or polenta.

And now, for dessert...

After a meal like this...dessert is perfect (isn't dessert always perfect?).  When we eat dessert, we like to choose sweets that are also nourishing and support the body (instead of depleting it).   Green smoothies are a wonderful option for dessert.  You can find recipes for Dessert Smoothies in 7 Days of Green Smoothies!!!
