Pumpkin Spiced Oatmeal Recipe (vegan, gluten free)

Pumpkin Spiced Oatmeal

Ingredients:

1/2 cup oats 2 Tbsp chia seeds 1/3 cup mashed pumpkin 1/2 tsp cinnamon 1/4 tsp nutmeg 1/4 tsp ground cloves 1 cup water 1/2 cup coconut milk (or you can use almond milk, rice milk)

handful pumpkin seeds handful cacao nibs handful raisins maple syrup to taste

Directions:

1. Combine the oats, chia seeds, pumpkin, water and spices in a small pot.  Simmer for 3-5 minutes, until the oats are cooked. 2. Pour into a bowl, drizzle maple syrup and coconut milk over top.  Add the seeds, cacoa nibs, and raisins.
