Lemon Thyme Almond Biscuits (gluten free, sugar free)

We love playing around with different and unique combinations of spices and herbs.  Lately we have been really into lemon.  And, this time of year, lemons are awesome!

Lemon Thyme Almond Biscuits

* double this recipe to make more!  this makes about 6 medium sized biscuits.

1 cup oats

3/4 cup almond flour

2 Tbsp ghee (clarified butter) or coconut oil or organic butter

1 egg

1 apple, grated

1 Tbsp lemon zest

1 Tbsp thyme, fresh

1/4 tsp sea salt

1 tsp baking powder

 

Directions:

1. Preheat the oven to 350. 2. Mix together the dry ingredients in a bowl. 3. Add in the wet ingredients, fresh lemon zest and thyme into the batter. 4. Form into biscuits and spread out on a baking sheet. 5. Bake for 15-20 minutes, depending on how well done you prefer.
