Cinnamon Apple Granola Bars

Granola bars are one of the best things to have for breakfast- when you prepare them yourself (because that means you get to decide what goes into them- especially how much sweetener and the type of oil that you use).  So many packaged granolas and granola bars are loaded with sugar and lack the highest quality oils and ingredients. Plus, you can save some extra money when you make a big batch of your own granola.  And easily make it gluten free (use Certified Gluten Free oats if you are celiac), sugar free, and vegan.

Cinnamon Apple Granola Bars

1/2 cup grated apple
1 Tbsp maple syrup
2 Tbsp chia seeds mixed with 4 Tbsp warm water
3 Tbsp melted coconut oil or ghee 3 Tbsp tahini or almond butter
1.5 cups oats
1/4 cup almond flour
1/4 cup almonds
1/4 cup pecans
1/4 cup cacao nibs
1/4 cup raisins
1/4 cup sunflower seeds
1/2 tsp cinnamon
1/4 tsp nutmeg
1/8 tsp sea salt
Directions:
1. Preheat oven to 350.  Mix together the wet ingredients in a bowl.
2. Add the dry ingredients and stir until you have a sticky batter. 3. Lightly oil a baking dish with coconut oil or ghee.  Spread the batter out in the baking dish.
4. Bake for 15-20 minutes, until lightly browned on top. 5. Allow to cool and then slice into bars.
