Banana Bread (Blueberry or Chocolate) Breakfast

Dessert can be breakfast- sometimes.  We're not talking about sugary Cocoa Puffs, Cookie Crisp, or Lucky Charms.  We're talking about home made, whole grain, fruit sweetened goodness.


This banana bread is great as a dessert, snack, and can even pass off as a breakfast (probably best if you skip out on the chocolate first thing in the morning- unless, of course, you are using raw unsweetened cacao nibs).

Banana Bread (Blueberry or Chocolate)

2 ripe bananas

1/4 cup coconut sugar
1/2 cup almond milk (or other dairy free milk)
1/4 cup ghee or coconut oil, melted
1 egg (or 2 Tbsp flaxseeds mixed with 3 Tbsp water for vegan version)
1 1/4 cup spelt flour or oat flour or gluten free flour of your choice
1/2 tsp baking soda
1/4 tsp sea salt
1/2 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp ginger
1/3 cup blueberries or chocolate chips (or cacao nibs- raw chocolate)
1/4 cup walnuts, pecans or hazelnuts
1. Preheat the oven to 350.
2. Mash up the bananas until creamy.  Mix in the other wet ingredients.
3. Mix together the dry ingredients.
4. Fold the dry ingredients into the wet ingredients and add the chocolate chips or blueberries, and nuts if desired.
5. Pour into a baking dish (rectangular or round). Bake for 30-45 minutes, until firm to touch.
