Gluten Free Chickpea Tabouli
Tabouli doesn't have to be made with bulgur, which contains gluten. These days you will often found it made with quinoa. In fact, it doesn't even have to be made with a grain, but instead can be made with chickpeas. This is a non-traditional spin on the delicious dish!
2 cups chickpeas (cooked or sprouted) 1 cup parsley, chopped 1/2 cup cilantro, chopped 1 cup red peppers, chopped finely 1 cup cucumbers, chopped finely
handful pumpkin seeds handful sunflower seeds
1 lemon, juiced 1 clove garlic, minced 1/8 tsp sea salt 2 tsp honey or maple syrup 4 Tbsp extra virgin olive oil 2 Tbsp tahini
Directions: 1. Chop all of the vegetables and mix together in a large bowl. 2. Combine the dressing ingredients and mix until blended well. 3. Toss everything together. 4. Sprinkle sunflower and pumplik seeds on top.
