Before we get to cooking for today, we wanted to let you in on one of the projects we are currently working on. We have had many requests for meal delivery from current clients and people who are interested in working with us. We currently cook privately in clients' homes, which is a fantastic way to have personalized, fresh, heathy food prepared for you.

Whole Grain Banana Chocolate Ganache Muffins
This is a spin on our classic Banana Bread Recipe, that we love. This version is a little bit sweeter, richer, and definitely meant to be served as a healthy dessert.
2 ripe bananas, mashed 1 egg 1/3 cup ghee (clarified butter) or coconut oil 1/3 cup maple syrup 2 Tbsp coconut sugar 1 cup almond milk (or other milk of choice)
1 1/2 cups spelt flour (or other whole grain flour, such as: oat, kamut, quinoa, brown rice) 2 tsp baking powder 1/8 tsp sea salt 1/2 tsp cinnamon
Chocolate Ganache: 1/4 cup creamed coconut 2 Tbsp cocoa powder 2 Tbsp maple syrup pinch sea salt ( to taste)
Directions: 1. Preheat the oven the 350. 2. Mix together all of the wet ingredients. Fold in the dry ingredients. 3. Gently warm the coconut cream in a small saucepan, so that it becomes soft. Mix together with the maple syrup and sea salt, until smooth. 2. Place muffin liners in a muffin tin. 3. Spoon 1/2 of the batter into the muffin cups, filling them about 1/2 way to the top. 4. Spoon a teaspoon of chocolate ganache on top of the batter in each muffin cup. 5. Spoon the remaining batter into each muffin cup, covering the chocolate ganache. 6. Bake in the oven for 20-25 minutes, until slightly firm to touch on top (these muffins will be moist and dense).
