These cookies are SO easy to make. We have been experimenting with making super healthy desserts lately, that are easy for everyone to digest- even for those of us who can't eat gluten or grains of any variety. This cookie is rich...but super yummy and good for your tummy.
Coconut Chocolate Cookies
6 Tbsp coconut flour (just over 1/3 cup)
1/4 cup coconut oil (solid)
2 Tbsp brown rice syrup
pinch of sea salt
1 dark chocolate bar
1 cup of blueberries
1. Pulse the coconut oil, coconut flour and sea salt in the food processor until crumbly. Add in the brown rice syrup and blend until a batter is formed.
2. Form the batter into small balls and add in some blueberries with each ball if you are making the blueberry version. Place on baking sheet, and press the cookies down gently.
3. Or, if you are making the chocolate version- melt the chocolate in a double boiler. Place a small bowl in a saucepan that has about 2 inches of water in it. Place the chocolate in the bowl. Bring the water to a boil and allow the chocolate to melt. Meanwhile, form the batter into small balls and press into cookies on the baking sheet. Then pour carefully over each cookie, once it has been placed on the baking sheet.
4. Bake at 350 for 15-20 minutes.
