Paleo Banana Coconut Mini Muffins
2 bananas 2 eggs
1/3 cup coconut sugar
2 Tbsp coconut oil softened
2 cups almond flour
1/3 cup chocolate chips (optional)
1/4 cup coconut shreds
1. Preheat the oven to 350. 2. In a food processor blend together the bananas, coconut oil, coconut sugar, softened coconut oil and sea salt. After blended, add the eggs and pulse a few times to fold in well.
3. Once the wet ingredients are blended, add in the almond flour and pulse a few more times. 4. Oil a mini muffin tin tray or place muffin liners in the tray. Spoon a small amount of batter into each muffin cup. Place a few chocolate chips and/or shredded coconut. Spoon some more batter on top, filling up the muffins.
5. Sprinkle some shredded coconut and/or chocolate chips on top of each muffine.
6. Bake for 10-15 minutes, until firm in the center.
