Quinoa, Herbs & Goji Berry Super Salad
1 cup adzuki beans or small red beans, cooked 1 cup quinoa, cooked 1/4 cup parsley, chopped 1/4 cup cilantro, chopped 1/8 cup dill or mint, chopped 2 carrots, grated 1 green onions, chopped finely 1/3 cup cashews 1/4 cup pumpkin seeds or sunflower seeds 1/4 cup goji berries
Dressing: 1/4 cup olive oil 3 Tbsp red wine vinegar 1/8 tsp sea salt 1 Tbsp honey 1 small clove garlic, minced
Directions: 1. Mix together all of the ingredients in a bowl. 2. Mix together the dressing ingredients. 3. Toss everything together.
