Whether you are vegan for moral reasons or eliminating dairy from your diet for health reasons, enjoying a dairy-free version of caesar salad is pretty easy.
You can use this salad dressing on romaine, mixed greens, or any other type of salad leaves, if you want to switch it up.
Vegan Kale Caesar Salad
1 bunch of kale (organic) 1/2 cucumber, sliced handful red cabbage, chopped finely/shredded
1/2 cup toasted sunflower seeds 4 Tbsp olive oil 1 Tbsp honey 1/8 tsp sea salt 1 lemon, peeled (you can keep the white pith on the lemon) 1/4 tsp dried Italian spices/seasoning
Directions: 1. In a food processor blend the sunflower seeds, olive oil, honey, sea salt, lemon, and Italian spices until creamy. 2. Rinse off the kale and dry it well. Chop finely. 3. Mix together the vegetables with dressing in a bowl. Use a pair of tongs to massage and soften the kale as the dressing marinates.
