We love a cup of full-bodied, comforting cappuccino with some steamed almond milk. You know, the type of cup that you can sip on ever so slowly, inhaling the warmth and depth of the flavours. A good local, fairtrade, organic cup of coffee has done us some good in this season of transitioning from the heat of summer to the frosty mornings and chilly nights of early fall. However, sometimes we don't want the caffeine contained in coffee or we want a beverage that is going to help us stay healthy and support our immune system.
So, we created the most delicious cup of brewed goodness.
Feel Better Brew
1/4 cup organic cashews, soaked for 2 hours
1 Tbsp Teeccino
2 cups water
1 tsp cinnamon
1/2 tsp cardamom
1 inch piece of organic ginger root
1. Heat the water and Teecino in a small pot. Bring to a boil and then turn off the heat. Allow to sit for a few minutes.
2. Filter the brew threw a tea strainer or coffee filter.
3. Rinse off the cashews.
4. Combine all of the ingredients in a high power blender (such as Vitamix or Blendtec) and blend for a minute or until creamy.
5. If this mixture is too strong for you, you can add more hot water to dilute or you can add hot coconut milk (to bring in a coconut spin!).
