I have to admit I have an ice-cream addiction! My favourite summer treat is something cool and refreshing. But along with that indulgence comes the guilt of eating not so healthy! But I have good news…. you can enjoy a delicious treat without the guilt!!
You're probably thinking that “bean” popsicles don’t sound very appetizing, but trust me they are delicious!! They are very simple to make with few ingredients.
Coconut Bean Popsicles
*recipe adapted from The Great Vegan Bean Book by Kathy Hester
1 small can (Eden brand is best, BPA free and prepared with seaweed) or 1 cup soaked, cooked and rinsed organic black beans
2 cups of coconut milk
2 Tbsp of coconut flakes, unsweetened
¼ cup of raw cacao powder
2 Tbsp raw honey
2 Tbsp vanilla extract
Add all the ingredients to a high-powered blender. Blend ingredients until completely smooth. Fill your Popsicle containers with mixture and freeze overnight.
Now it’s time to enjoy this gluten free, guiltless treat!!
