Almond Flour Banana Pancakes
2 cups almond flour (or use raw almonds and blend them up in your food processor to make almond flour from scratch)
pinch sea salt
toasted shredded coconut (optional)
maple syrup (optional)
fresh berries (optional)
1. In the food processor blend the almond flour, banana, eggs and sea salt together until creamy.
2. Heat a frying pan with a dab of coconut oil for a few minutes on low-medium heat.
3. Spoon the batter onto the frying pan and cook for a few minutes on one side, until it starts to solidify. Then flip over and cook for a few minutes on the second side. These pancakes tend to burn quickly, so be careful to keep them at a low-medium heat.
4. Serve with toasted shredded coconut, maple syrup, berries and more coconut oil or butter if desired. Yum yum!
