We love eating pancakes, granola and muffins for breakfast. But, we usually also want something savoury and green. Green vegetables in the morning are the BEST! Vegetables in the morning = more energy for the day and leave us feeling refreshed after a night of sleeping and dehydration.
Israeli Inspired Breakfast Salad
1 cucumber, cut into cubes
1 cup cherry tomatoes, cut in half
1 cup fresh parsley, chopped finely
2 Tbsp tahini
3 Tbsp olive oil
1 lemon, juiced
2 tsp honey
sea salt to taste
1. Chop the vegetables.
2. Mix the tahini, olive oil, lemon juice, honey and sea salt together in a small bowl until creamy.
3. Mix all ingredients together. Add more sea salt if needed. You can also squeeze some fresh lemon top of each serving if you like extra citrus!
