Now that it is starting to get warmer outside, we are craving desserts that are more refreshing and lighter than some of the baked goods, cookies and warm desserts that we tend to be drawn to in the winter time.
Using avocados in pudding is one of our favorite little tricks to play on people- because they are always surprised when we serve a dessert that is uses an ingredients that is not typically thought of as a sweet food. Avocados are one of the best options for vegans and vegetarians who are not eating dairy, but still want something creamy and refreshing for dessert. The other good thing about this dessert is that it is sweetened with low glycemic sweeteners that won't spike your blood sugar. So, not only can you get a serving of vegetables in your dessert, but you can know that you are also nourishing your body with nutritious fats, healthy sweeteners, and endorphin enriching dark chocolate.
Chocolate Avocado Pudding
2 ripe avocados
1/2 cup raw cacao powder of organic cocoa powder
1/3 cup coconut sugar or maple syrup (you can feel free to add more sweetener if you have a bigger sweet tooth)
pinch sea salt
Blend all ingredients in a food processor until smooth and creamy. Serve with fresh berries, shredded coconut, and/or dark chocolate chips.
