No offense, but we often find green beans really boring. They are particularly boring when steamed in the classic medley of broccoli, carrots, peas, corn and green beans. However, green beans certainly do not have to be prepared this way.
One of our favorite things to do is create a medley of green beans with similar vegetables, adding in snowpeas and snappeas. Combining these three green string vegetables together creates a beautiful array of texture, shape and size. Snowpeas and snappeas also provide a more interesting punch of flavour, as opposed to the often bland and simple green beans.
Crispy Shallot Green Bean Medley
1 cup green beans
1 cup snowpeas
1 cup snappeas
2 cloves garlic or 2 tsp garlic powder
2 tsp grapeseed oil (or other high heat cooking oil)
sea salt to taste
1. Slice the shallots as thinly as you can and mince the garlic (if using fresh). Gently heat a saute pan with oil.
2. Add the shallots and garlic and saute for a few minutes until the shallots begin to get crispy.
3. Add in the green beans, snowpeas and snappeas. Saute for 5-10 minutes, until the vegetables are bright green.
4. Season with sea salt. Drizzle olive oil over top before serving.
