It's spring time and time for picnics and recipes that are easy to pack up and carry along for an outdoor meal.
Spring Chickpea Salad
1 can of chickpeas
1 cucumber, sliced in small pieces
1 carrot, sliced in small pieces
1 red pepper, chopped in small pieces
1 cup fresh parsley, chopped finely
1 cup fresh cilantro, chopped finely
2 green onions, chopped finely
1 cup sundried tomatoes, chopped
1 lemon, juiced
2 Tbsp apple cider vinegar
2 Tbsp olive oil
2 Tbsp tahini
1 Tbsp honey
sea salt to taste
1. Mix all of the ingredients together in a large bowl.
2. Mix together the dressing ingredients and then toss together with the vegetables and chickpeas.
