1/2 bunch kale, chopped finely
1/2 bunch romaine, chopped finely
3 cups arugula
1 red pepper, diced
1 yellow pepper, diced
1/2 cucumber, diced
1 sweet potato, cut in small cubes
1/2 cup blueberries
1/3 cup goji berries
1.5 lemons, juiced
1/4 cup olive oil
1 Tbsp maple syrup
pinch sea salt
1. Preheat the oven to 350. Chop the sweet potato cubes and then spread out on a baking sheet with a small amount of high heat cooking oil. Roast for 20-30 minutes until beginning to crisp.
2. Wash off and chop all of the vegetables.
3. Mix together the dressing ingredients.
4. Toss all of the ingredients together in a bowl.
