Grilled Peaches with Yogurt and Dukkah

Prep Time3 mins
Total Time10 mins
Course: Side Dish
Servings: 4

Ingredients

  • 2 peaches sliced in half
  • 1/4 cup yogurt or dairy-free yogurt (such as coconut yogurt) unsweetened
  • 2 Tbsp dukkah
  • handful chopped cilantro or mint or basil

Dukkah

  • 1/2 cup almonds or hazelnuts chopped finely
  • 2 Tbsp sesame seeds
  • 1 tsp ground cumin or cumin seeds
  • 1 tsp ground coriander or coriander seeds
  • 1/2 tsp sea salt

Instructions

Dukkah

  • Preheat oven or toaster oven to 375 and spread the nuts, sesame seeds and spices out on a baking sheet. Roast for around 5 minutes or until just lightly toasted.
  • Then add the toasted ingredients to a food processor (a mini sized one would probably work best here with the quantity) and pulse to finely chop. If you don't have a food processor, you can chop everything with a knife.

Peaches

  • Slice the peaches in half and remove the pits.
  • Heat a grill pan with around 1 Tbsp of coconut oil. Once the oil is melted, spread around to coat the whole pan.
  • Place the peaches flesh side down on the hot pan and cook for around 4 minutes. Carefully slide a spatula under the peaches and check for grill marks. Once they have light grill marks, flip and cook on second side for 2 minutes.
  • To serve, add several spoonfuls onto a plate and place the peaches over top. You can add a few more dollops of yogurt on top of the peaches.
  • Sprinkle 2 Tbsp of dukkah over top.
  • If you want to use fresh herbs, add some chopped basil, cilantro or mint.
